Coriander Pesto sauce
Put a couple of handfuls of fresh coriander into a blender with a clove of garlic,
a teaspoon of salt, a cup of olive oil and half a cup of pumpkin seeds
(preferably green), into a blender until smooth.
For two people: mix two desert spoons of sauce, two spoons of Parmesan cheese
and a splash of pasta water. Mix with pasta and decorate with a sprig of fresh
coriander.
Coriander Chicken
Blend a handful of coriander with a clove of garlic, half cup of fresh grapefruit
juice, 1/4 cup olive oil,salt and pepper.
Marinate boned chicken legs for 6 hours and then cook on the grill.
When one thinks of Mexican food, they automatically think of taco bell... this is not
really Mexican food.
When living in Mexico you will realize that the major part of the population has a diet
of beans,rice and tortillas, to this the addition of chili make this diet a perfect one!
But Mexico is full of amazing and interesting food:
I will start explaining the simplest thing of Mexican eating: THE TACO
To have a taco you first need a tortilla, these can be made out of wheat flour, and can
come with different flavours such as nopal (cactus), jalapeño and tomato among
others, and maize flour which are the most typical in the south of Mexico.
Once you have a tortilla and you roll it up with something inside it becomes a taco.
A flour tortilla filled with cheese and grilled in a pan, becomes a quesadilla, if you
add mushrooms or spinach, it becomes a mushroom or spinach quesadilla, and so on...
A corn tortilla deep fried and flat becomes a tostada, and is topped with refried beans,
chicken, lettuce, slices of tomato, grated cheese, salsa sour cream.....
Just the corn dough filled with meat, cheese,chicken...doubled over and deep fried
becomes and empanada.
